Planning My Menu

I'll be making dinner for between 4 to 8 people on Satuday and I need to think about my menu. My limitations are:
- One guest likes to eat low-carb
- It's my local meal for the week
- I don't know how many people will show up
- I want to have them help me prep
- I don't want to spend the whole time cooking

Appetizers:
Mozzarella, tomatoes, and basil
My sister's homemade hummos with veggies

Main Course:
BLT Salad
Roasted Veggies
Bacon, green, ricotta fritata

Dessert:
Peach Goat Cheese Ice Cream with Salted Pistacios
Spicy Coffee Ice Cream Sandwiches

Drinks:
Mijitos
Cinnamon and Peach Margaritas

What else?
